INSTANT POT CREAMY CAULIFLOWER SOUP

Winter is coming, which means it’s time to start warming up with some delicious soup. Try this simple and delicious creamy cauliflower soup that you can quickly whip up in the Instant Pot in 10 minutes!

INGREDIENTS:

  • 1 ½ tsp Coconut OIl
  • 1 Chopped Yellow Onion
  • 1 Chopped Carrot
  • 1 Cauliflower Chopped into Florets
  • 1 Cup Vegetable Broth
  • ½ Cup Water
  • ½ Cup Coconut Milk
  • ¼ tsp Sea Salt
  • ½ tsp Nutmeg
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. Turn Instant Pot to Sauté.
  2. Coat bottom of Instant Pot with coconut oil.
  3. Add onion and carrots. Sauté for 5 minutes stirring frequently.
  4. Add cauliflower and cook for 5 minutes stirring occasionally.
  5. Stir in broth, water, coconut milk, salt, and nutmeg.

CREAMY TOMATO GLUTEN-FREE PASTA

Do you have a hankering for some pasta, but you’re not trying to spend hours in the kitchen? Try this quick and easy creamy tomato pasta that will have you in and out the kitchen with a delicious meal in minutes!

INGREDIENTS:

  • 12 oz of Brown Rice Pasta
  • 1 Tbsp Ghee
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Minced Garlic Cloves
  • 1 Diced Onion  
  • 14.5 oz Can of Fire-Roasted Diced Tomatoes
  • 12 oz Can of Tomato Paste
  • 13.5 oz Can of Coconut Milk
  • 1 Tsp Sea Salt
  • ½ Tsp Black Pepper
  • 1-2 Tsp Turbinado Sugar (optional)

INSTRUCTIONS:

  1. Cook pasta according to package instructions.
  2. Heat a skillet over medium-low. Add ghee and sautee garlic and onions until softened.
  3. Stir in tomatoes and tomato paste.
  4. Add in coconut milk, salt, pepper, and sugar.

Having a craving for some of your favorite Italian dishes now that you’ve gone gluten- and lactose-free? Try this delicious gluten- and lactose-free alfredo sauce!

INGREDIENTS:

  • 1 Medium Spaghetti squash
  • 2 Tbsps Ghee
  • 4 Minced garlic cloves
  • 1 Small White onion (about 1 cup)
  • 1 cup Vegetable Broth
  • 3 Tbsps Tapioca flour
  • 2 Cans of Coconut milk
  • 1 Tsp Sea salt
  • 1/2 Tsp Black pepper
  • 2 Tbsps Nutritional yeast (optional)

INSTRUCTIONS:

  1. Preheat oven to 400F.
  2. Slice spaghetti squash in half and scoop out seeds.
  3. Drizzle with olive oil and place on baking sheet face down.
  4. Bake in one for 50 minutes.
  5. Heat ghee in a medium saucepan.
  6. Stir in garlic cloves, onions, and nutritional yeast (optional).

INGREDIENTS:

For the spring rolls:

  • 1 Head of Bok choy cut into 10 wraps
  • 1 Cucumber cut into matchsticks
  • 1 Carrot cut into matchsticks
  • 1 Avocado thinly sliced
  • Handful of chopped mint
  • Handful of chopped cilantro
  • 10 Rice wrappers
  • 1 large bowl of warm water 

For the almond sauce:

  • 1/2 Cup Almond butter
  • 2 Tbsp Sriracha
  • 2 Tbsp Coconut aminos
  • 2 Tsp Sesame oil
  • 1 Tsp Rice Vinegar
  • Juice of 1 Lime

INSTRUCTIONS:

  1. Fill a large bowl with warm water.
