INSTANT POT CREAMY CAULIFLOWER SOUP

Winter is coming, which means it’s time to start warming up with some delicious soup. Try this simple and delicious creamy cauliflower soup that you can quickly whip up in the Instant Pot in 10 minutes!

INGREDIENTS:

  • 1 ½ tsp Coconut OIl
  • 1 Chopped Yellow Onion
  • 1 Chopped Carrot
  • 1 Cauliflower Chopped into Florets
  • 1 Cup Vegetable Broth
  • ½ Cup Water
  • ½ Cup Coconut Milk
  • ¼ tsp Sea Salt
  • ½ tsp Nutmeg
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. Turn Instant Pot to Sauté.
  2. Coat bottom of Instant Pot with coconut oil.
  3. Add onion and carrots. Sauté for 5 minutes stirring frequently.
  4. Add cauliflower and cook for 5 minutes stirring occasionally.
  5. Stir in broth, water, coconut milk, salt, and nutmeg.

QUICK & EASY VEGETARIAN GLUTEN-FREE SPRING ROLLS WITH ALMOND SAUCE

Looking for some healthy recipes now that you’ve gone gluten-free? Try out these delicious Vegetarian-friendly gluten-free spring rolls with almond sauce!

INGREDIENTS:

For the spring rolls:

  • 1 Head of Bok choy cut into 10 wraps
  • 1 Cucumber cut into matchsticks
  • 1 Carrot cut into matchsticks
  • 1 Avocado thinly sliced
  • Handful of chopped mint
  • Handful of chopped cilantro
  • 10 Rice wrappers
  • 1 large bowl of warm water 

For the almond sauce:

  • 1/2 Cup Almond butter
  • 2 Tbsp Sriracha
  • 2 Tbsp Coconut aminos
  • 2 Tsp Sesame oil
  • 1 Tsp Rice Vinegar
  • Juice of 1 Lime

INSTRUCTIONS:

  1. Fill a large bowl with warm water.
  2. Submerge rice wrapper (one at a time) in the bowl and lay flat on a plastic cutting board (or plate).
