Looking for a quick and easy breakfast that isn’t overnight oats? Try this mouthwatering Breakfast Frittata for a delicious meal that can be on the table in as little as 15 minutes.

INGREDIENTS:

  • 6 Beaten Eggs Cooking Spray
  • 1 Cup Spinach
  • ¼ Cup Chopped Mushrooms
  • ¼ Cup Diced Tomatoes
  • ¼ Cup Red Onions
  • 2 Sliced Chopped Turkey Bacon
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. Beat 6 eggs in a bowl.
  2. Season with salt and pepper. Set aside.
  3. Heat cast iron skillet on medium-low heat. Coat with cooking spray.
  4. Sauté spinach for 1 minute.
  5. Add mushrooms, tomatoes, onions and turkey bacon to the skillet.
  6. Evenly pour the eggs over vegetables.
  7. Using the back of a spatula to ensure eggs are evenly spread.

Perfect Chorizo and Red Pepper Omelet

PERFECT CHORIZO AND RED PEPPER OMELET



PREP TIME: 10 MINS  | COOK TIME: 15 MINS  | TOTAL TIME: 25 MINS


Looking for an easy way to spice up your omelet? Try this delicious Perfect Chorizo and Red Pepper Omelet!

INGREDIENTS:

  • 6 Eggs
  • 2 Tbsp Water
  • 2 Tsps Ghee
  • 1 Red Pepper
  • 1 Chorizo sausage
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. In a bowl combine eggs, water, salt, and pepper.
  2. Heat skillet on medium heat. Melt 1 tsp ghee and coat bottom of skillet.
  3. Chop the red pepper.
  4. Remove the skin from chorizo and chop into small cubes.
  5. Add red pepper and chorizo to skillet. Cook 4-5 minutes.
  6. Remove red pepper and chorizo to plate.
  7. Turn up the heat to medium-high. Melt remaining 1 tsp ghee in the skillet.
  8. Pour in eggs and cook until the edges set.
  9. Slowly push the edges of the egg toward the center, so uncooked portions can cook.
