Kale Salad with Grilled Lemon Chicken

If you're like me, sometimes you come home and you just want to whip up a super quick meal for dinner!

That's why I love me some salad because it's one of the fastest things you can whip up to get on the dinner table. 

But, like most people, eating a boring salad isn't going to satisfy my cravings.

Grilled Chicken Ingredients

1 lb Chicken Breast

1 Tsp Olive Oil 

½ Tsp Lemon Pepper Seasoning

½ Tsp Sea Salt

Olive Oil Cooking Spray 


Salad Ingredients

2 Tbsps Extra Virgin Olive Oil 

1 Tbsp Lemon Juice 

1 Minced Garlic Clove

1 Tbsp Nutritional Yeast 

1 Bunch of Sliced Kale 

¼ Cup Chopped Pistachios


  1. Preheat the grill or grill pan. 
  2. Spray the grill pan with cooking spray. 
  3. Drizzle the chicken breast with olive oil and season with lemon pepper and salt 
  4. Place the chicken on the grill and cover. Cook for 5-8 minutes per side. 
  5. While the chicken is cooking prepare the dressing and assemble the salad. 
  6. In a small bowl whisk together the olive oil, lemon juice, garlic, and nutritional yeast. 
  7. In a separate bowl add the kale and drizzle the dressing over top. 
  8. Massage the kale with your hands to ensure it is evenly coated. 
  9. After the chicken is ready let it sit for 5 minutes before slicing.
  10. Top the salad with chicken and pistachios. 
  11. Enjoy!
