Instant Pot Kale & Bacon Quinoa Bowl

One of the challenges that many busy professionals face every day is how to get dinner on the table without spending hours in the kitchen. As a nutrition coach and meal planning educator, I know all too well that having the right tools in your kitchen makes a big difference when it comes to quickly get dinner on the table. 

That's why one of my favorite tools to use in the kitchen is the Instant Pot. But, for so many people the Instant Pot can feel intimidating and a bit overwhelming at first. The key to using the Instant Pot is keeping it simple. With helpful resources like, The Flavor Bible, you can easily whip together healthy and delicious meals without using complicated recipes that take way too long to prepare. 

In this episode, I show you how to easily whip up a quick and dirty Kale & Bacon Quinoa Bowl using the Instant Pot

Ingredients  

Quinoa 

1 cup Quinoa

2 cups Water

1 Teaspoon Oregano 

1 Tablespoon Ghee or Clarified Butter (optional)

 

Kale and Bacon 

2 Tablespoons Extra Virgin Olive Oil

1/2 Pack of Bacon 

3 Garlic Cloves 

4-5 Handfuls of Kale 

1 Teaspoon Oregano

1/2 Teaspoon Sea Salt 

Dash of Black Pepper 

Dash of Red Pepper Flakes (optional)

1/2 cup Vegetable Broth 

 

Directions

  1. Place quinoa and water in a saucepan and bring to a boil. Turn down to simmer and cover. Let simmer for 12-15 minutes. Remove from heat and set aside.
  2. Turn the Instant Pot onto Saute. 
  3. Saute the bacon and garlic for 3-5 minutes. 
  4. Add the kale, oregano, salt, red pepper, and black pepper. Stir to combine. 
  5. Pour in the vegetable broth. 
  6. Press Cancel, Pressure Cook and set the timer to 5 minutes. 
  7. Let the Instant Pot come to pressure and cook the kale and bacon for 5 minutes. 
  8. When the timer stops perform a Quick Release. 
  9. Once the pressure releases turn off the Instant Pot. 
  10. Place the quinoa in a bowl and top with the kale and bacon. 
  11. Enjoy!
