Teriyaki Beef & Rice Bowl

One of the most common questions I get is, how do you eat healthy with a busy schedule? For me, the answer always comes down to planning and prepping my meals ahead of time. 

Whether that means you're actually cooking every meal is your choice. 

What I've found for myself and my clients is that taking the time out to plan and prepare my meals ahead is a surefire way to set yourself up for healthy eating success. 

This is important because time isn't always on your side and some weeks can be more hectic than others. 

That's why planning ahead has become so important because there are times when you're not going to have a lot of time for meal preparation.

For those times, you can lean heavily into homemade freezer meals, which are meals you prepare ahead of time and store in your freezer for when you don't have much time for meal prep.

In this week's episode of A Spoonful of Soul, I share one of my favorite freezer-friendly, Teriyaki Beef & Rice Bowl recipes that is the perfect freezer meal for one! Read through to try it yourself.


Teriyaki Beef & Rice Bowl

SERVES: 4 | PREP TIME: 5 Mins | COOK TIME: 20 Mins |  TOTAL TIME: 25 Mins


INGREDIENTS

  • 1/4 cup tamari or coconut aminos
  • 1/3 cup brown sugar 
  • 1/4 tsp ground ginger
  • 2 tsp rice wine vinegar or mirin
  • 2 tbsp potato (or corn) starch
  • 1-2 tbsp coconut oil
  • 4 minced garlic cloves
  • 1 lb ground beef
  • 2 thinly sliced green onions
  • 1/4 tsp sesame seeds (optional)
  • 2 cups jasmine rice
  • Frozen veggies (optional)

TOOLS NEEDED

INSTRUCTIONS

  1. Prepare rice according to package instructions.
  2. In a saucepan combine 1 cup water, tamari, sugar, ginger, and rice wine vinegar over medium heat. Cook for 1 minute.
  3. In a small bowl combine starch and 1/4 cup cold water and stir until dissolved.
  4. Slowly add the starch mixture to saucepan. Add more water if needed until sauce is desired texture.
  5. Cook and stir sauce 5-7 minutes or until thickened.
  6. Heat coconut oil in a large skillet or wok over medium-high heat. Add garlic and cook for 30 seconds stirring constantly. 
  7. Add ground beef and cook 3-5 minutes or until browned. Drain excess grease.
  8. Stir in teriyaki sauce mixture and simmer for 2 minutes.
  9. Add rice to a bowl (or freezer-friendly container) and top with teriyaki beef mixture.
  10. Garnished with green onion and sesame seeds.
  11. Serve with frozen veggies (optional).
