BREADED LEMON PEPPER SALMON WITH CAESAR SALAD

Want to eat healthy, but don’t have much time? Try this delicious Breaded Lemon Pepper Salmon with Caesar Salad for a quick meal you can have ready for in minutes!

SALMON INGREDIENTS:

  • 1 lb Salmon
  • Juice of 2 Lemons
  • 1-2 Tbsps Coconut Oil
  • 1 Egg (optional)
  • 1 ½ cups Gluten-Free Bread Crumbs
  • Salt & Pepper to taste

SALAD INGREDIENTS:

  • Juice of 2 Lemons
  • ¼ cup Coconut Milk
  • 1 Tsp Dijon Mustard
  • 1 Tbsp Capers
  • 3-4 cups Spinach
  • 1 Sliced Tomato
  • ½ Sliced Yellow Onion
  • 1 Sliced Cucumber
  • ¼ cup Vegan Parmesan Cheese (optional)
  • Salt & Pepper to taste

INSTRUCTIONS:

  1. In a bowl combine juice of two lemons, salt, pepper and salmon. Cover and refrigerate for 30 minutes.
  2. Preheat a skillet over medium heat. Coat pan with coconut oil.
  3. Remove salmon from fridge.
  4. Evenly spread bread crumbs over plate.
  5. In a separate bowl lightly beat egg and coat both sides of the salmon (optional).
  6. Coat both sides of salmon with bread crumbs.
  7. Add salmon to skillet. Cook salmon for 5-7 minutes per side.  
  8. In another bowl whisk together juice of two lemons, coconut milk, dijon mustard, capers, salt and pepper. Set aside.
  9. In another bowl combine spinach, tomato, onion, cucumber, and parmesan (optional). Set aside.
  10. Plate salad, salmon and drizzle with caesar dressing.
  11. Enjoy!
