BEEF CURRY IN A HURRY

INGREDIENTS:

  • 1 Package Zucchini Noodles
  • 2 Tbsps Coconut Oil
  • 2 Tbsps Red Curry Paste
  • 1 Can Coconut Milk
  • 2 Cups Beef Broth
  • 2 Tsps Fish Sauce
  • 1 Tbsp Turbinado Sugar
  • 1 Tsp Turmeric
  • 1 Tbsp Curry Powder
  • 1 Tsp Sea Salt
  • 1 lb Sliced Beef Tenderloin
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. Bring a large pot to boil over high heat.
  2. Add zucchini noodles and cook for 1 minute.
  3. Heat a large stockpot over medium-high heat.
  4. Add coconut oil to stockpot.
  5. Whisk in curry paste, coconut milk, broth, fish sauce, turbinado sugar, turmeric, curry powder, and sea salt.
  6. Bring to a boil.
  7. Add in beef.
  8. Reduce to simmer and cover.
  9. Cook for 20 minutes.
  10. Enjoy!
