1/4 cup Quinoa

1/2 cup Water

1 1/2 Tablespoons Extra Virgin Olive Oil

1 lb Ground Turkey

2 Teaspoons Curry Powder

Dash of Cayenne Pepper

Sea Salt & Black Pepper (to taste)

1 1/2 Teaspoons Minced Ginger

1 cup Pineapple Chunks

1Grated Carrot

1Grated Zucchini


  1. Place quinoa and water in a saucepan and bring to a boil. Turn down to simmer and cover. Let simmer for 12 minutes. Remove from heat and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey to skillet and break up pieces.
  3. Stir in curry powder and cook in skillet until cooked through.
  4. When the turkey is cooked stir in carrot, zucchini pineapple, quinoa, ginger, sea salt, pepper, and cayenne. Reduce heat to low and stir well. Let heat through for about 5 minutes.
  5. Enjoy!
